Rebecca says: “There are lots of lovely local food you can add to your pancakes as toppings–from local honey (we love Honeys of Henley), jams (try Twee and Violet’s Orchard for awesome flavours made with locally grown fruit) and cream (delicious golden Guernsey cream from Laceys’ farm is the best) and yogurt (nothing beats Tim’s Dairy, produced in Bucks). And, of course, more chocolate – Rumseys and Yvette’s Chocolates are both local and delicious”

Makes 6 pancakes

1 egg
2tbsp melted butter
235ml milk
120g plain flour
35g cocoa powder
20g sugar
1tsp baking soda
pinch of salt
TOPPINGS: Your favourite combo of icing sugar, fruit, chocolate sauce, syrup, and/or whipped
cream – but best of all, try something new and local!

  1. Whisk up the egg and then whisk in the melted butter and milk.
  2. Sieve in the rest of the ingredients and whisk until all combined.
  3. Over a medium heat, put 3 tablespoons of pancake mix onto a non-stick frying pan.
Wait until air bubbles appear (approx 90 seconds) and then flip and cook on the other
    side for 30-45 seconds.
  4. Enjoy warm with your favourite topping.
